The juice was cleaned by means of floatation after it was racked and inoculated to ferment at low temperatures. Left on the lees for months before blending and bottling.

Neil Ellis Elgin Chardonnay 2014

Tasting Notes

Pale straw with vibrant green hues. Attractive nectarine and white peach notes dominate the nose. Yeast and fine oak add layers and character. The palate is flavoursome and creamy with notes of secondary barrel fermentation. Subtle use of oak provides structure and complexity of flavour.

This wine was fermented and matured on the lees for 6 months in French oak puncheons. Wild yeast fermentation and partial malolactic fermentation add complexity and mouth feel to this wine.

Tasting Notes

Tim Atkin MW Lovely, aromatic, red-fruits nose. Subtle, refreshing and complex graphite-like mineral palate. Well balanced, with low-key winemaking. Meaty and complex.
Guy Harcourt-Wood Rich, spicy, dark fruit palate. Complex, chalky tannins with balancing acidity. Warm, lingering finish.
Greg Sherwood MW Dusty, chalky, graphite and woodsmoke notes. Minty, leafy sweet black plum and cherry spice. Textural and round, carries the alcohol well. Fragrant, sweet and complex. Palate complexity grows and grows.

Tasting Notes

Medium red, purple in colour with high-toned blackcurrant, violet and cedar aromas and touches of mint, so typical of a Jonkershoek wine. The rich, ripe opulent but youthful palate has plummy fruit, a background of new oak and fine tannins. This is a multi-faceted wine that needs time to mature.

Fermentation is initiated in stainless steel tanks. The crushed grapes underwent a series of pump overs until dry. Further maceration is allowed before drawing off and light pressing. Malolactic fermentation completed in new French oak barrels. This wine spent 20 months in 100% new French oak barrels.

Tasting Notes

Deep in colour, this wine shows wonderful overlapping of aromas and flavours. A rich, ripe and generous soft mid palate with a juicy impression is supported by layered complexity.

Fermentation initiated in stainless steel tanks and underwent a series of punch downs and pump-overs until dry. Further maceration allowed before drawing off and light pressing. This wine spent 18 months in 500 litre French oak barrels of which 33% was new.

Tasting Notes

Vibrant crimson colour. Perfumed and spicy with rich plummy fruit. A medium bodied palate with good weight. Fine grained fruit tannins complement a rich concentrated palate.

Fermentation initiated in stainless tanks and underwent a series of punch downs before completion of fermentation and malolactic fermentation in the barrel. This wine spent 18 months on 20% 1st fill and the balance was on 4th fill and older.
